Rugelach

Ingredients

  • 1⁄2 Pound Butter, Softened
  • 1 8-Ounce Package Regular Cream Cheese (Not Light), Softened
  • 2 Cups Flour
  • 1 Egg Yolk

Filling Ingredients

  • Two 8-Ounce Packages Cream Cheese (At Room Temperature)
  • 3⁄4 Cup Sugar
  • 1⁄2 Cup Unbleached All-Purpose Flour - 2 teaspoons Vanilla Extract
  • 1⁄4 Cup Heavy Cream
  • 2 Large Eggs

Baking Instructions


Cut cream cheese and butter into flour until sticky. Add egg yolk. Divide dough into 3 equal balls. Flatten into disc shapes, cover each in plastic wrap and chill in refrigerator for 2 hours. Roll each ball (with rolling pin) into a 9” circle. Cut circles into 16 pieces (pizza style).

350 degrees

Mix all the filling ingredients together. Sprinkle filling on circles of dough. Roll, widest edge to the point. Place on cookie sheet point down. Sprinkle top of each cookie with a little additional sugar. Bake in 350 degree oven for 18-22 minutes or until slightly golden brown.
