Rugelach

Ingredients

  • 1⁄2 Pound Butter, Softened

  • 1 8-Ounce Package Regular Cream Cheese (Not Light), Softened

  • 2 Cups Flour

  • 1 Egg Yolk

Filling Ingredients

  • Two 8-Ounce Packages Cream Cheese (At Room Temperature)

  • 3⁄4 Cup Sugar

  • 1⁄2 Cup Unbleached All-Purpose Flour - 2 teaspoons Vanilla Extract

  • 1⁄4 Cup Heavy Cream

  • 2 Large Eggs

Baking Instructions

  • Cut cream cheese and butter into flour until sticky. Add egg yolk. Divide dough into 3 equal balls. Flatten into disc shapes, cover each in plastic wrap and chill in refrigerator for 2 hours. Roll each ball (with rolling pin) into a 9” circle. Cut circles into 16 pieces (pizza style).

325 degrees

  • Mix all the filling ingredients together. Sprinkle filling on circles of dough. Roll, widest edge to the point. Place on cookie sheet point down. Sprinkle top of each cookie with a little additional sugar. Bake in 350 degree oven for 18-22 minutes or until slightly golden brown.
