Blueberry Loaf

Ingredients

  • 1⁄2 Cup Butter
  • 3⁄4 Cup Sugar
  • 1 Egg
  • 2 Cups Flour
  • 2 teaspoons Baking Powder
  • 1⁄2 teaspoon Salt
  • 1⁄2 Cup Milk
  • 2 Cups Blueberries

Topping Ingredients

  • 1⁄2 Cup Sugar
  • 1⁄4 Cup Butter, Softened - Cup Flour
  • 1⁄2 teaspoon Cinnamon

Baking Instructions

400 degrees


In a small bowl combine 1⁄2 cup sugar, 1⁄4 butter, cup flour, and cinnamon with your fingers until crumbly. Sprinkle the topping over the batter. Bake at 400 degrees until toothpick comes out clean. (Check at 20 minutes if making muffins).

Oil bread tins (1 large or 4 mini loaves or 12 muffin tins). In a large bowl cream together 1⁄2 cup butter and 3⁄4 cup sugar. Add the egg, beating well. In a separate bowl combine 2 cups flour, baking powder and salt. Add to the creamed mixture alternately with the milk. Fold in the blueberries. Fill the prepared pans ’s full.
